Ingredients:
- 400g penne pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 200g mushrooms, sliced
- 1/2 a cup of grated vegan cheese
- 35g vegan cheese sauce mixture
- 200g fresh spinach, roughly chopped
- 1 tablespoon all-purpose flour
- 400ml unsweetened almond milk
- Salt and black pepper to taste
- Nutritional yeast or vegan Parmesan cheese, optional for garnish
Method:
1. Cook the penne according to the package instructions until al dente. Drain and set aside.
2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
3. Add the sliced mushrooms to the pan, cook until they are browned and tender.
4. Stir in the spinach and cook until it wilts.
5. Sprinkle that vegan cheese sauce mix & flour over the vegetables and stir to coat.
6. Slowly add the almond milk to the pan while stirring. The flour will help to thicken the sauce as it heats.
7. Add in the grated vegan cheese and then season the sauce with salt and pepper, then let it simmer for about 5 minutes until it thickens slightly.
8. Add the cooked penne to the pan and stir well to coat the pasta in the sauce.
To serve:
Serve the pasta hot, garnished with nutritional yeast or vegan Parmesan if desired.
