Fiery Sweet Vegan Halloumi BBQ Skewers

Today, we're turning up the heat with a recipe that brings the perfect blend of hot and sweet right to your barbecue grill: our Fiery Sweet Vegan Halloumi cheese BBQ Skewers. Juicy tofu and vegan halloumi Cheese, a rainbow of vibrant vegetables, all bathed in a homemade hot and sweet BBQ marinade - this is summer on a skewer!

Serves: 4


Preparation time: 30 minutes (plus marinating time)

Cooking time: 10 minutes

Total time: 40 minutes (plus marinating time)

 

Ingredients:


- 400g firm tofu, cut into cubes

- 200g vegan halloumi cheese, cut into cubes

- 2 bell peppers (one yellow, one red), cut into chunks

- 2 courgettes, sliced into rounds

- 200g mushrooms, halved

- 2 sweetcorn, cut into rounds


For the Hot and Sweet BBQ Marinade:

- 1 cup of your favourite vegan barbecue sauce

- 2 tablespoons of hot sauce

- 2 tablespoons of maple syrup

- 1 teaspoon of smoked paprika

- 1 clove of garlic, finely minced


 

Method:


1. Start by preparing the hot and sweet BBQ marinade. In a bowl, combine the barbecue sauce, hot sauce, maple syrup, smoked paprika, and minced garlic. Stir until well combined.


2. Place the tofu and vegan halloumi cubes into a bowl, pour over half the marinade, and stir gently to coat. Let this marinate for at least 2 hours, or overnight if you have the time.


3. Preheat your barbecue or grill to a medium heat.


4. Assemble the skewers by threading the marinated tofu and halloumi, bell peppers, courgettes, mushrooms, and sweetcorn rounds onto skewers.


5. Grill the skewers for about 10 minutes, turning occasionally and brushing with the remaining marinade, until the vegetables are tender and the tofu and halloumi have a nice char.



To serve:

Serve these fiery skewers straight off the grill and watch the compliments roll in!


 

Additional Tips:


Pair these fiery skewers with a fresh cucumber salad or some cooling vegan tzatziki to balance out the heat. Homemade marinades like this one really bring your dishes to the next level - don't be afraid to experiment with your favourite flavours!
