There's something utterly delightful about a vegan jacket potato - crispy skin on the outside and fluffy on the inside. But we're taking it to the next level with a generous heap of deliciousness! Linda McCartney Vegan Mince brings a rich and flavorful touch, while the luscious vegan sour cream adds a tangy creaminess. Get ready to dig into this masterpiece!

Ingredients:


- 2 large baking potatoes

- 1 package of Linda McCartney Vegan Mince (or any other vegan mince of your choice)

- 1 tablespoon of vegetable oil

- 1 small onion, finely chopped

- 2 cloves of garlic, minced

- 1 teaspoon of ground cumin

- 1 teaspoon of paprika

- 1/2 teaspoon of chili powder (adjust to your spice level)

- Salt and pepper to taste

- Vegan sour cream (store-bought or homemade) for topping

- Fresh chives or spring onions, chopped, for garnish


 

Method:


1. Preheat the oven to 200°C (392°F).


2. Scrub the potatoes under running water and pat them dry. Pierce the skin with a fork several times to allow steam to escape while baking.


3. Rub the potatoes with a little oil and sprinkle them with salt. Place them directly on the oven rack or on a baking tray. Bake for about 1 hour or until the skin is crispy, and the flesh is tender.


4. While the potatoes are baking, prepare the vegan mince. In a pan, heat the vegetable oil over medium heat.


5. Add the finely chopped onion and sauté until translucent. Stir in the minced garlic and cook for another minute.


6. Add the vegan mince to the pan and season with ground cumin, paprika, chili powder, salt, and pepper. Cook according to the package instructions or until heated through and well combined with the spices.


7. Once the potatoes are done baking, carefully slice them open, fluff the insides with a fork, and fill each potato with a generous portion of the vegan mince mixture.



To serve:

Top each loaded potato with a dollop of vegan sour cream and garnish with chopped fresh chives or spring onions.


 

Additional Tips:


Enhance the flavors with your favorite vegan cheese or add some sliced avocado for extra creaminess.
