Spicy Vegan Kimchi Noodle Soup


Today, we're journeying to the vibrant heart of Korean cuisine with this spicy vegan kimchi noodle soup. Imagine a chilli broth that's both spicy and slightly tangy, brimming with noodles and topped with sharp red chilli peppers and refreshing scallions. This dish is the perfect way to warm up on a chilly evening or to enjoy a comforting lunch. Let's bring the sizzle to our kitchens with this tantalising recipe!

Ingredients:


- 200g ramen noodles

- 2 cups vegan kimchi

- 1 litre vegetable broth

- 2 tablespoons gochujang (Korean red pepper paste)

- 1 tablespoon soy sauce

- 1 teaspoon sesame oil

- 4 red chilli peppers, sliced

- 4 scallions, sliced

- 2 tablespoons vegetable oil


 

Method:


1. Start by heating the vegetable oil in a large pot over medium heat. Add the vegan kimchi and sauté for about 5 minutes, until it begins to soften.


2. Stir in the gochujang and continue to cook for another 2 minutes.


3. Pour in the vegetable broth and bring the mixture to a boil. Lower the heat and let it simmer for 10 minutes to allow the flavours to infuse.


4. Meanwhile, cook the ramen noodles according to the package instructions and drain.


5. Stir the soy sauce and sesame oil into the broth. Taste and adjust the seasoning as needed.


To serve:

Divide the noodles between four bowls, ladle over the spicy broth, and top each serving with sliced red chilli peppers and scallions.


 

Additional Tips:


For added protein, consider adding some pan-seared tofu cubes to the soup. You could also add other vegetables of your choice, like mushrooms or bok choy.
