Transforming the classic indulgence of crab cakes into a plant-based masterpiece, these vegan crab cakes offer an impeccable fusion of texture and flavour. Recipe:


Serves: 4 (3 Cakes per serving)

Ingredients:


- 1/4 cup chickpea flour

- 2 tbsp nori or seaweed flakes (for the seafood flavour)

- 2 green onions, finely chopped

- 2 cloves garlic, minced

- 2 tbsp lemon juice

- 1 tsp Dijon mustard

- Salt and pepper, to taste

- Additional breadcrumbs for coating

- 2-3 tbsp olive oil, for frying


For the Herb Aioli:

- 1/2 cup vegan mayonnaise

- 1 clove garlic, minced

- 1 tbsp lemon juice

- 1 tbsp fresh dill, chopped

- Salt and pepper, to taste

 

Method:


1. In a large mixing bowl, combine shredded jackfruit, chickpea flour, nori flakes, green onions, garlic, lemon juice, vegan mayonnaise, and Dijon mustard. Season with salt and pepper.


2. Mix until all ingredients are well-combined. Shape the mixture into 12 cakes.


3. Coat each cake with breadcrumbs, pressing them gently to adhere.


4. In a frying pan, heat olive oil over medium heat. Once hot, add the vegan crab cakes and fry for 5-7 minutes on each side, until golden and crispy.

5. For the herb aioli, whisk together vegan mayonnaise, garlic, lemon juice, and fresh dill in a bowl. Season with salt and pepper.

6. Serve the vegan crab cakes hot with a dollop of herb aioli and a wedge of lemon.

 

Additional Tips:


Serve with a fresh tangy slaw or green salad to complement the richness of the cakes.

A squeeze of fresh lemon just before eating enhances the seafood-like experience.

For a smoky touch, consider adding a dash of smoked paprika to the mixture.
