Ingredients:


- 400g firm tofu, sliced

- 4 cloves of garlic, minced

- Mixed herbs (basil, oregano, thyme), as per taste

- 100g bread crumbs

- 1kg potatoes, peeled and quartered

- Vegan butter, as per taste

- Salt and pepper, to taste

- 200g fresh spinach

- 200g mushrooms, sliced

- Olive oil, for grillingx


 

Method:


1. Mix garlic, herbs, and bread crumbs in a bowl. Dredge each tofu slice in this mixture, ensuring each slice is fully coated.


2. Heat olive oil in a pan over medium heat. Add the tofu slices and cook until they are golden and crispy. This should take about 3-4 minutes each side.


3. Meanwhile, boil the potatoes until soft. Drain and mash them with vegan butter, salt, pepper, and a sprinkle of mixed herbs.


4. In another pan, sauté the mushrooms with a bit of olive oil until they are browned and tender. Wilt the spinach in the same pan with the mushrooms, adding it just a minute or two before the mushrooms are done



To serve:

Serve the crispy tofu slices with a side of creamy herb mash, and a heap of wilted spinach and grilled mushrooms.


 

Additional Tips:


Pair this meal with a fresh salad or a glass of white wine for an even more delightful experience.


You can also drizzle some vegan gravy over the mash for extra flavour.
