Vegan Ricotta & Broccoli Lasagna


Lasagna is the epitome of comfort, and this vegan version takes it to new heights! Layers of tender lasagna intermingled with creamy ricotta cheese, sautéed spinach, and broccoli, all infused with garlicky goodness, make this dish an absolute crowd-pleaser. To add a delightful crunch and visual appeal, we're finishing it off with a breadcrumb topping that turns golden in the oven.

Total time: 60 minutes

 

Ingredients:


- 300g of lasagna sheets

- 2 cups of fresh spinach, chopped

- 2 cups of broccoli florets, chopped

- 1 tablespoon of olive oil

- 4 cloves of garlic, minced

- 1 batch of homemade vegan ricotta (or store-bought)

- 1 cup of unsweetened plant-based milk

- 2 tablespoons of nutritional yeast

- 1/2 teaspoon of dried oregano

- 1/2 teaspoon of dried basil

- Salt and pepper to taste

- 1/2 cup of breadcrumbs

- Fresh basil leaves, for garnish


 

Method:


1. Preheat the oven to 180°C (350°F).


2. In a pan, heat olive oil over medium heat. Sauté the minced garlic until fragrant.


3. Add the chopped spinach and broccoli florets, cooking until they're tender-crisp.


4. In a bowl, combine the vegan ricotta, plant-based milk, nutritional yeast, dried oregano, dried basil, salt, and pepper. Mix well until smooth and creamy.


5. In a baking dish, spread a thin layer of the ricotta mixture at the bottom. Add a layer of lasagna sheets, followed by a layer of the sautéed spinach and broccoli. Repeat the layers until all ingredients are used, finishing with a layer of the ricotta mixture on top.


6. Sprinkle the breadcrumbs evenly over the top layer.


7. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the breadcrumbs turn golden.



To serve:

Garnish with fresh basil leaves before serving.


 

Additional Tips:


Add your favourite vegan cheese shreds between the layers for an extra indulgent touch.
