Ingredients:
- 400g firm tofu, cubed
- 4 courgettes, spiralised
- 1 red bell pepper, finely sliced
- 1 orange bell pepper, finely sliced
- 200g mushrooms, sliced
- 200g noodles of choice
- 150ml sweet chilli sauce
- 2 tablespoons vegetable oil
- Salt to taste
Method:
1. Press the tofu to remove excess moisture, then toss in a bowl with half the sweet chilli sauce. Set aside to marinate for 10 minutes.
2. Bring a large pot of water to boil, add a pinch of salt, then add the noodles and cook as per
packet instructions. Once cooked, drain and set aside.
3. Heat a tablespoon of oil in a wok or large frying pan over medium heat. Add the tofu and stir-fry until golden and crispy, then remove and set aside.
4. In the same pan, add another tablespoon of oil and stir-fry the bell peppers and mushrooms until softened.
5. Add the spiralised courgettes and stir-fry for a further 2 minutes, ensuring the veggies are well mixed.
6. Return the tofu to the pan, add the cooked noodles and the remaining sweet chilli sauce. Toss everything together until well combined and heated through.
To serve:
Garnish with sesame seeds and sesame oil and sweet chilli sauce if you desire and serve hot.
